Woke up at 5am today all set for a few hours in the kitchen before children rush-hour. Feeling better despite the last of the flu.  Certainly more inspired and energised.

First up it was Beef Stoganoff in Slow Cooker.  I did not add the honey or arrowroot starch.

Next I needed more coconut milk, so whipped that up.  I did not wait for it to drain through the mesh too long.  I squeezed the last of the drops out and then put the pith into the dehydrator.  My last lot of coconut milk went off quickly, so I either left it out to drain too long, not used it fast enough or the raw ingredient coconut was not too good.  Will monitor this one as I believe I am using the same brand packet.

AIP Carrot and Sweet Potato “Chilli” was next on the list.  This was done in two parts, the first the vegetables and later in the evening the meat was cooked off and added for dinner.

Easy breakfast yet again.

It is so easy to get something out of the freezer.  I took a slice of Beet-Loaf (Meatloaf) out and into a pan of leftover chicken gravy from last night.  I’m not too fussy on the flavours.  Look how awesome it turned out with a few snap peas on top.  It was delicious too.

I was out this morning, so snacked on a banana while other enjoyed chocolate cake.  I was not in the least tempted.

Lunch

Home to my  Beef Stoganoff in Slow Cooker.  Ahh the beauty of getting a slow cooker set so early in the morning, it is ready for a sumptuous lunch.

Steamed off some cauliflower, blitz it in the thermomix for a base with some cooked green bananas on the side.  I have to be honest, I only got through one piece of banana!

Dinner

I cooked off the mince and added it to the vegetables from this morning to make up the AIP Carrot and Sweet Potato “Chilli”.

The big excitement of the day was my local Butler Farmer Jacks kindly ordered me in some Plantains. So I collected these later in the afternoon.

Had a bit of fun learning how to peel these.  Didn’t go exactly to Mr Google’s instructions, but a lot easier to do than I had anticipated.

Following the recipe by Sarah Ballantyne for Plantain Crackers , poured the mixture onto a tray.

After 10 minutes of cooking you need to score it with a pizza knife or similar.

Didn’t think they were quite cooked, so into the oven a bit more.  They are awesome to eat.  I’ll be lucky to have any to take a photo of. 🙂
