Energised this morning.  Up at at it….

Put on a slow cooker – Slow Cooked Lamb Shank with carrots and leeks again.

Breakfast

Left over Crispy Roast Chook with Avocado for a touch of colour.  I portioned off the rest and put into freezer containers.  Thinking ahead!

Lunch

On the run today.  As I had made the coconut milk yesterday I was able to make up I made a Green Smoothie, which was really quite pink! Very tasty all the same. I did not have any gelatin to add.  I had one glass earlier and one later for afternoon tea.  Held off the rumbly tummy.

A Pink ‘Green’ Smoothie

Hubby came home after a surf and decided that it was steak time and served me up this whopper.  It was an Angus Pure and Natural T Bone.  At first I thought, ” this is too huge and I am certainly not eating all of that!”  One bite and I was in heaven.  Soooo tender and it was devoured very quickly.  Certainly not the tough old bit of meat that I had expected it to be.

Quickly put in another broth, this time chicken from the leftover bones from the roasted chook.  I also added some of the fat that was cut from the Beef Stroganoff yesterday.  To add some more nutrients I put in a couple of pieces of Kombu seaweed.

Dinner

I had other options in the fridge, but decided while dividing the Lamb Shanks up into freezer portions, that I would have a serve of that.  To add some greens, added a handful of spinach to the saucepan while it was reheating.  Warmed up some of the Plantain Crackers to have with it as they are super wonderful hot!
