Woken up by one happy and healthy child, with the other not so good, with steady temperature with no improvement all day.

Had an amazing amount of energy – must have been all that straight protein yesterday!  Tackled some not so ordinary jobs.  They had been kept for the day I could be bothered.  Well that was today!

Running a bit late and the hunger had set in.  Had 1/2 glass of coconut milk while I hustled up what I found delicious before.  Beet-Meat (MeatLoaf) A bonus to have some gravy ready to go in the fridge and the loaf sliced and frozen in the freezer.  It makes AIP so easy to do.

Was supposed to be breakfast, never mind, a bitter later than brunch.

Tried out some Nitrate Free & Sugar free bacon.  Hubby had picked it up the other day after we had a conversation about it.

AIP Thyroid

I thought it was super delicious and enjoyed a bacon fry up.  Rutabaga Hashbrowns, on a bed of mesclun, with chopped bacon, fried onions and avocado and Enoki mushrooms sauteed in Coconut barbecue sauce . Heaven.

There is actually a Rutabaga Hashbrown under there!

A simple meal, but a yummy one. Used the steak that I had bought in my bulk meat buy two weeks ago. This was organic grass feed from Woolworths. More fried onion, fresh steamed broccoli, raw carrot (’cause that’s how I like it) and sauerkraut.

AIP Thyroid

Simple, but delicious

I’m looking forward to another energy filled day tomorrow
