Straight into it this morning. Had better luck with my Rutabaga Hashbrowns today.  Added more Tapioca flour to the portion I was going to use.  Also used lard from a roast last week that my husband had made.  The fat seemed to draw up into the hashbrown and kept it together.  Very happy with the outcome.  Put a couple of frozen Sage Chicken Breakfast Patties in the saucepan steamer.  Heated up some onion in the same pan as the Hashbrowns and plated on a bed of Mesclun lettuce.  Used a splash of olive oil, balsamic vinegar and few drops of Plum Sauce on the top.

Great way to start the day

Cooked up the Coriander and Coconut Marinated Chicken.  I had put into a bag to marinate two days ago, and forgot to mention it…. a lot going on in the kitchen! My bad.  This recipe came out of a Coles Baby & Toddler Winter 2012 magazine under ‘The Sunday Cook’.  I omitted the sweet chilli sauce.

I put into the slow cooker a Slow Cooked Lamb Shank as I knew we were going out in the afternoon.

Today, I was absolutely exhausted.  Felt like I was in a flare, ached all over – I think the bowling yesterday may not have helped.  But really? I am NOT that unfit, surely………well, maybe I am. Anyway I sneaked off to have a wee lie down and relax my back and muscles.  While I was thinking what I really needed was a nice hot bath and some magnesium.  I feel into a deep sleep.  Next, it was two hours later! How fabulous was that.  Back into action, most of my pain and stiffness gone.  It was time to be back into life again.


Was a bit of a hurried affair, as I was on a time limit, but I had to try out the Coriander and Coconut marinated Chicken. Put that on a plate with some avocado, cooked pumpkin and sauerkraut.

Quick lunch

We had been invited to a toddler’s 2nd birthday late afternoon.  It was lovely to see lots of healthy food on the table. I was able to snack on Carrot sticks, Guacamole without tomato (yay) and lovely in-season cherries.

Made up some cauliflower mash as the recipe suggested and plated up.  Yummy.  The nicest meal so far.
