Headache today 🙂  You know, the type, just there niggling with every movement.  Annoying.  Seriously, am I detoxing already?

Terrible night sleep too.  My eldest decided she wanted to sleep in our bed.  No matter how big a bed is, there is still no room! Some ungodly hour I was up tending to my youngest.  He wanted a story!  I managed to cuddle into bed with him and sing his favourite Twinkle, Twinkle.  So woke feeling like I’d been out partying, when I hadn’t.  At least if I had, I would have a smile on face about the great time I’d had. No. This was day two of AIP.

Straight up into some more preparation.  Needed to get the Beef Bone Broth into the freezer. It was still a bit dark and cold so I had to use the flash on the phone.

These are the Patty Tins I was talking about in the last post. In case you had no idea what they were.

Had a bit of fun getting it level in the freezer, note to self; take a moment to prepare a level place first. Once frozen, you can get them out easily from the patty tins by first turning the whole tray upside down and running hot water over the back of the tray, you need to be quick though, as they start to drop out, so have a large baking dish handy that they can drop onto.  Store them in plastic zip seal bags in the freezer, they stack well.

I was hungry before I knew it and had not sorted out my breakfast.  So grabbed an emergency meal out of the fridge. Stewed apple – no sugar, sliced banana and home made coconut milk  Most likely too much fruit sugar, but I needed something quick.  Note to self; be better organised.

Back into some more food prep. Removing the coconut residue from the muslin from making Coconut Milk and spreading it out to go into the dehydrator.

Best not waste power on just one level in the dehydrator.  Having tried and failed at making sweet potato crisps the other day, I baked a whole one first, took about an hour.  Then sliced it and placed onto the tray.  Hopefully I will have better luck with these.

Not too shabby!  Reheated Slow Cooker Beef Stew with steamed Kalettes and avocado.  Super delicious.

Off to take my daughter out – school holidays, the movie we wanted to see was full, so we wandered over the road and made some new discoveries.

So excited to find these.  Every little thing that can make the mundane interesting.

Back home and more preparing.  I don’t want to be cooking all the time!  Really batch cooking is the way to go.  I fried of a large lot of mushrooms and used my new Plum Vinegar and plain Coconut Aminos I already had in the cupboard.  Delicious! – stashed away in the fridge.

Meanwhile preparation for the Herbed Beef Sausage Patties was underway.  The recipe is from Charlotte Smith at Salixisme – AIP Living.  An easy recipe, mix the herbs with the beef and cook in the oven.

Dinner

Dinner was so much easier.  Two portions of last nights Crispy Roast Chook by Sarah Wilson’s ‘I Quit Sugar for Life’, page 111.  One portion baked pumpkin with steamed broccoli and cauliflower.

Hooray, day two completed.
